Super Citrus Rosewater Quick Loaf (Serves one 9-by-5 inch loaf pan • Simple Treat for the Special Day!) INGREDIENTS: 2 Large eggs 1 Cup granulated sugar 1 Cup sour cream 1 ⁄2 Cup canola oil - Zest from the entire lemon - Juice from the entire lemon 2 Tbsp. lemon extract 1 1 ⁄2 Cups all-purpose flour 2 Tsp. baking powder ROSEWATE R GLAZ E This is a thick set rosewater glaze, so the loaf must be completely cool before adding or it will all run off. INGREDIENTS: 1 Cup confectioners' sugar 2 Tbsp. rosewater, more or less as nec- essary for the correct consistency DIRECTIONS: 1 To a small bowl, add the confec- tioner's sugar and slowly drizzle in the rosewater while mixing with a rubber spatula until smooth and combined. 2 Spread over top of the loaf with a knife or small offset spatula and zest extra lemon on top before it sets completely. Your goal is a thick glossy coating. DIRECTIONS: 1 Preheat oven to 350 Fahrenheit. Spray a 9-by-5 inch loaf pan with baking spray; set aside. To avoid frying the sides, be sure to rub the baking spray into the pan. 2 In the bowl of a stand mixer with the paddle attachment, add the room temperature eggs and sugar and mix until light and pale in color. Then add the room temperature sour cream and mix until combined. 3 Add the oil, lemon zest, lemon juice and lemon extract and combine. 4 In a separate bowl, sift the flour and baking powder. Remove the bowl from the stand mixer and add the dry ingredients, using a rubber spatula to combine the flour mixture. Turn until just combined and let sit for 10 minutes (this lets the gluten relax and helps to break down some of the lumps). After 10 minutes, mix again with the spatula, slowly, removing most of the remaining lumps-don't worry the rest will bake out. 5 Add your batter to your coated pan and place on a sheet pan. Bake for 20 minutes, then rotate the pan halfway through. Bake for an additional 20 minutes. Then using a sheet of tinfoil, create a tent for the last ten minutes of baking and place over your loaf pan. Total bake time will be 50 minutes. At 50 minutes, insert a skewer into the middle of the loaf to be sure it's done. 6 Remove from the oven and allow loaf to cool in pan on top of a wire rack for at least 30 to 45 minutes then remove from the pan but do not glaze.
